What's your favorite sweet potato dish?
There are so many ways to enjoy North Carolina's abundant crop of sweet potatoes, and you'll get a chance to see some awesome creations at the Down East Holiday Show at the Greenville Convention Center in Greenville this Sunday. NewsChannel 12's Valentina Wilson will be there along with Greenville native Christian Brown (you might have seen him on Cut Throat Kitchen) and UNC-TV food expert Bob Garner.
Anyone who knows me knows that I love to cook. What can I say? I'm a southern girl at heart. While growing up, my mom often cooked sweet potato pies, candied yams and of course baked sweet potatoes during the holidays.
It's a versatile vegetable. You can make it into whatever you want: a side dish, dessert or lunch-time treat. And who doesn't like sweet potato fries?
Here's my recipe for one of my favorite dishes, sweet potato casserole. It's served at a lot of functions here in Eastern North Carolina, and it's pretty easy to make, so enjoy!
Sweet Potato Casserole
Six sweet potatoes (peeled)
Dash of cinnamon
Dash of nutmeg
Teaspoon of vanilla flavoring
1/2 cup of white sugar
1/2 cup of heavy cream
Boil and puree sweet potatoes (or bake and puree them) until smooth. Mix potatoes and ingredients until smooth.
1 pound of light brown sugar
1/2 cup of chopped pecans
1/4 cup of unsalted butter
Melt butter. Mix ingredients together and smooth on top of sweet potatoes. Put sweet potatoes in casserole dish, add pecan topping and bake at 300 degrees for 45 minutes.
